  • 1/3 cup Granulated sugar no substitutions recommended
  • 1 tbsp Baking powder make sure it’s fresh
  • 1/2 tsp Salt a pinch is a must unless using salted butter
  • 1/2 cup Cold, cubed butter ensure it's cold for best texture
  • 1 cup Milk buttermilk adds a lovely tangy touch
  • 2 tbsp Lemon zest always use fresh for best impact
  • 1 tbsp Lemon juice always use fresh for best impact

Instructions

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Mix the dry ingredients: combine all-purpose flour, sugar, baking powder, and salt in a large bowl.
  • Cut in the butter: add cold, cubed butter to the dry mixture and work it in until it resembles coarse crumbs.
  • Combine wet ingredients: pour in milk, lemon zest, and lemon juice, and stir gently until just combined.
  • Knead the dough lightly on a floured surface until it holds together.
  • Shape into wedges: form the dough into a 1-inch thick circle and cut into wedges.
  • Bake for 15-20 minutes until golden brown on top.
  • Cool slightly on a wire rack before serving.

Notes

Serve with clotted cream or a sprinkle of powdered sugar for added sweetness.
