Instructions
How to Make the BEST Fudgy Chewy Brookies
Preheat your oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
Melt the chopped dark chocolate and unsalted butter together in a heatproof bowl over simmering water until smooth.
In a separate bowl, beat together the caster sugar, demerara sugar, and room temperature eggs until light and fluffy, about 5 minutes.
Sift together the plain flour, cocoa powder, baking powder, and salt in another bowl. Add a handful of chocolate chips to this mixture.
Gently fold the melted chocolate mixture into the whipped eggs until just combined.
Carefully fold in the dry ingredients until just mixed. Avoid overmixing!
Scoop generous dollops of the batter onto the lined tray, spacing them apart. Bake for 12-14 minutes.
Sprinkle a touch of sea salt flakes on top and allow the brookies to cool for about 10 minutes before transferring to a cooling rack.
