  • 50 grams Demerara Sugar
  • 30 grams Cocoa Powder Unsweetened
  • 2 large Eggs At room temperature
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt

  • 1 teaspoon Sea Salt Flakes

How to Make the BEST Fudgy Chewy Brookies

  • Preheat your oven to 160°C (320°F) with a fan or 170°C (338°F) for conventional heating. Line a baking tray with parchment paper.
  • Melt the chopped dark chocolate and unsalted butter together in a heatproof bowl over simmering water until smooth.
  • In a separate bowl, beat together the caster sugar, demerara sugar, and room temperature eggs until light and fluffy, about 5 minutes.
  • Sift together the plain flour, cocoa powder, baking powder, and salt in another bowl. Add a handful of chocolate chips to this mixture.
  • Gently fold the melted chocolate mixture into the whipped eggs until just combined.
  • Carefully fold in the dry ingredients until just mixed. Avoid overmixing!
  • Scoop generous dollops of the batter onto the lined tray, spacing them apart. Bake for 12-14 minutes.
  • Sprinkle a touch of sea salt flakes on top and allow the brookies to cool for about 10 minutes before transferring to a cooling rack.
