Ingredients

For the Filling

  • 1 sheet puff pastry (thawed)
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 200 g fresh spinach (or use frozen, thawed & drained)
  • Salt and pepper to taste
  • 100 g feta cheese, crumbled
  • 50 g mozzarella cheese, shredded
  • 1 egg for egg wash

Instructions

Preparation

  • Preheat oven to 200°C (390°F) and line a baking sheet with parchment paper.
  • In a pan, heat olive oil over medium heat. Add chopped onion and cook until soft.
  • Stir in garlic and cook for 1 more minute until fragrant.
  • Add spinach and sauté until wilted (if using fresh). Season with salt and pepper. Remove from heat and let cool slightly.
  • Mix in crumbled feta and shredded mozzarella into the spinach mixture.
  • Roll out the puff pastry sheet and cut into squares (around 8–10 depending on size).
  • Spoon a bit of the spinach-cheese filling into the center of each square.
  • Fold corners slightly toward the center or leave open for a rustic look.
  • Brush the edges lightly with beaten egg.

Baking

  • Bake for 15–20 minutes, or until golden and puffed.

Notes

Serve warm with a side of Greek yogurt or a garlic dipping sauce. Add a pinch of red pepper flakes for a little heat. Great for brunch tables, lunchboxes, or make-ahead appetizers!
