200gfresh spinach (or use frozen, thawed & drained)

Preparation
Preheat oven to 200°C (390°F) and line a baking sheet with parchment paper.
In a pan, heat olive oil over medium heat. Add chopped onion and cook until soft.
Stir in garlic and cook for 1 more minute until fragrant.
Add spinach and sauté until wilted (if using fresh). Season with salt and pepper. Remove from heat and let cool slightly.
Mix in crumbled feta and shredded mozzarella into the spinach mixture.
Roll out the puff pastry sheet and cut into squares (around 8–10 depending on size).
Spoon a bit of the spinach-cheese filling into the center of each square.
Fold corners slightly toward the center or leave open for a rustic look.
Brush the edges lightly with beaten egg.
Baking
Bake for 15–20 minutes, or until golden and puffed.
Notes
Serve warm with a side of Greek yogurt or a garlic dipping sauce. Add a pinch of red pepper flakes for a little heat. Great for brunch tables, lunchboxes, or make-ahead appetizers!
