  • In a small bowl, combine soy sauce, cornstarch, brown sugar, and chili flakes; mix until the cornstarch is dissolved. Set aside.
  • Heat sesame oil in a large skillet over medium heat. Add minced garlic and grated ginger, cooking until fragrant, about 1-2 minutes.
  • Add ground turkey to the skillet, breaking it up into small pieces. Cook until the meat is no longer pink, about 5-7 minutes.
  • Stir in the prepared sauce mixture and continue cooking over high heat for about 2 minutes. If the sauce thickens too much, add a tablespoon of water.
  • Mix in chopped chives (reserve some for garnish), then remove from heat. Top with toasted sesame seeds, and serve over rice alongside vibrant vegetables.
