Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

  • 1/2 cup vegetable oil
  • 1 1/4 cups granulated sugar
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1/2 cup water
  • 1 teaspoon vanilla extract

Optional Add-ins

  • 1/2 cup chopped walnuts Optional for added texture

Instructions

Preparation

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9x5-inch loaf pan.
  • In a medium bowl, whisk together the flour, baking soda, salt, and spices.
  • In a large bowl, beat together the vegetable oil and sugar until smooth.
  • Add the eggs, one at a time, mixing well after each addition.
  • Mix in the pumpkin puree, water, and vanilla extract.
  • Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  • If desired, fold in the chopped walnuts.
  • Pour the batter into the prepared loaf pan and smooth the top with a spatula.

Baking

  • Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for 3-4 days. For longer storage, wrap in plastic and refrigerate for a week or freeze for 2-3 months.
