Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon ground ginger

Wet Ingredients

  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 0.5 cup vegetable oil
  • 2 large eggs room temperature
  • 1 cup canned pumpkin puree
  • 0.33 cup water
  • 1 teaspoon vanilla extract

Streusel Topping

  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 0.25 cup cold unsalted butter, cubed

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan well.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Make sure these dry ingredients are well combined.

Mixing Wet Ingredients

  • In a large bowl, combine the granulated sugar, brown sugar, and vegetable oil. Add the eggs one at a time, mixing well after each addition.
  • Next, stir in the pumpkin puree, water, and vanilla extract until the mixture is smooth.

Combine Ingredients

  • Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined. Be careful not to overmix; it's okay if there are a few small lumps.

Streusel Topping

  • For the streusel topping, mix the flour, brown sugar, and cinnamon in a small bowl. Then, cut in the cold butter with a fork until the mixture looks like coarse crumbs.

Baking

  • Pour the batter into the prepared loaf pan, and then sprinkle the streusel topping generously over the top.
  • Bake in your preheated oven for 55-65 minutes. Check if it's done by inserting a toothpick into the center. It should come out clean or with just a few moist crumbs.

Cooling

  • Let the bread cool in the pan for about 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Notes

Slice and serve as is, or spread a bit of butter on warm slices. Pairs well with coffee or tea. For a special treat, add cream cheese frosting on top. Storing: Wrap tightly in plastic wrap or aluminum foil; keeps well at room temperature for about 2-3 days, or freeze for up to 3 months.
