Instructions

Making the Fritters

  • Prep the Peaches: Begin by peeling and dicing your ripe peaches. Set them aside in a bowl.
  • Make the Batter: In a mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon. In a separate bowl, beat the eggs, then combine with milk and vanilla. Mix wet into dry and fold in peaches.
  • Heat the Oil: In a deep pan, add about 2 inches of oil and heat to 350°F.
  • Fry the Fritters: Drop heaping tablespoons of the batter into the hot oil. Fry for 2-3 minutes until golden brown.
  • Make the Glaze: Whisk together powdered sugar, milk, and vanilla until smooth. Drizzle or dip fritters in glaze.
