Ingredients

  • 24 round tortilla chips
  • 2 tbsp olive oil
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 cup refried beans
  • 8 oz Colby cheese, grated
  • salsa, for serving
  • sour cream, for serving

Instructions

  • Preheat oven to 375°F and prepare two parchment-lined baking sheets.
  • Heat refried beans in a saucepan with 1/4 cup water until bubbly, then remove from heat.
  • In a skillet, heat olive oil, season ground beef with taco seasoning, and cook until browned.
  • Spread warm beans on each tortilla chip, top with taco meat, and sprinkle with cheese.
  • Bake for 6–8 minutes, until cheese is melted.
  • Using tongs, fold each chip into a taco shape while warm.
  • Serve immediately with salsa and sour cream.

Notes

Make them meatless by swapping beef for lentils, black beans, or tofu. Add jalapeños or pepper jack cheese for spice. For extra flavor, mix salsa into the refried beans before assembling. Best served fresh but can be stored for 2 days and reheated at 350°F for 5 minutes to restore crunch.
