Cooking Steps
Season the short ribs generously with salt and pepper, ensuring every surface is coated.
Heat olive oil in a skillet over medium-high heat. Sear the ribs on all sides until they are beautifully browned, about 3-4 minutes per side.
Remove the browned ribs from the skillet and set them aside. Add the diced onion to the same skillet, cooking for about 3-4 minutes until softened and translucent.
Incorporate minced garlic into the onions, cooking for an additional 30 seconds until fragrant.
Stir in beef broth, red wine, soy sauce, Worcestershire sauce, tomato paste, brown sugar, smoked paprika, thyme, and rosemary. Allow the mixture to simmer for a couple of minutes.
Pour the sauce mixture over the ribs in the crockpot, making sure they are thoroughly coated. Add bay leaves.
Cover the crockpot and cook on low for 8-10 hours or high for 4-6 hours until the ribs are tender.
Remove the ribs from the crockpot once they're done. If desired, reduce the sauce over medium heat on the stove for a few minutes until thickened.
Optional: Serve over creamy mashed potatoes.
