Instructions

Cooking Steps

  • Season the short ribs generously with salt and pepper, ensuring every surface is coated.
  • Heat olive oil in a skillet over medium-high heat. Sear the ribs on all sides until they are beautifully browned, about 3-4 minutes per side.
  • Remove the browned ribs from the skillet and set them aside. Add the diced onion to the same skillet, cooking for about 3-4 minutes until softened and translucent.
  • Incorporate minced garlic into the onions, cooking for an additional 30 seconds until fragrant.
  • Stir in beef broth, red wine, soy sauce, Worcestershire sauce, tomato paste, brown sugar, smoked paprika, thyme, and rosemary. Allow the mixture to simmer for a couple of minutes.
  • Pour the sauce mixture over the ribs in the crockpot, making sure they are thoroughly coated. Add bay leaves.
  • Cover the crockpot and cook on low for 8-10 hours or high for 4-6 hours until the ribs are tender.
  • Remove the ribs from the crockpot once they're done. If desired, reduce the sauce over medium heat on the stove for a few minutes until thickened.
  • Optional: Serve over creamy mashed potatoes.

Notes

Serve with mashed potatoes or rice to soak up the sauce. Adjust seasonings to your preference before serving.
