Ingredients

  • 1 large Egg No substitutes recommended.
  • 1 cup Bread Crumbs Or crushed pork rinds, swap with almond flour for keto.
  • 1 tbsp Ground Ginger Adjust amount if using fresh ginger.
  • 1 tsp Chili Flakes Adjust quantity for less heat.
  • 1 tsp Garlic Powder Fresh minced garlic can be used.
  • 1 tsp Onion Powder No substitutions needed.

For the Sauce

  • 1 cup Teriyaki Sauce Use a homemade low carb sweet sauce for a healthier option.
  • 1/2 cup Water
  • 2 tbsp Butter Olive oil is a great dairy-free substitute.
  • 1/4 cup Brown Sugar Or low carb sweetener like Stevia or erythritol.
  • 1 tbsp Sriracha Sauce Optional; omit based on spice tolerance.

  • Preheat the oven to 350°F (175°C). This ensures your meatballs cook evenly and achieve that delicious golden brown color you’re looking for.
  • Combine ground chicken, egg, bread crumbs, ground ginger, chili flakes, garlic powder, onion powder, salt, and pepper in a large bowl. Mix everything together until well blended.
  • Shape the mixture into 2-3 inch meatballs using your hands or a scoop.
  • Arrange the meatballs on a baking sheet lined with parchment paper. Bake for 15-20 minutes, or until golden brown and the internal temperature reaches 165°F (74°C).
  • Prepare the sauce by combining teriyaki sauce, water, melted butter, ginger, garlic powder, chili flakes, brown sugar or low carb sweetener, salt, pepper, and Sriracha in a small saucepan.
  • Heat the saucepan over medium heat, stirring until the mixture simmers.
  • Toss the baked meatballs in the simmering sauce until they're well-coated and glistening.

Notes

For extra flavor, toss with fresh sauce after reheating. Serve with a sprinkle of sesame seeds for a delightful crunchy garnish.
