Ingredients

For the Meatloaf

  • 1 lb Ground Beef (80/20)
  • 1 cup Breadcrumbs use gluten-free if needed
  • 2 Eggs
  • 1 tsp Garlic Powder don't skip this for depth
  • 1 tsp Onion Powder essential for flavor
  • 1 tbsp Italian Seasoning
  • 1 tsp Salt
  • 1 tsp Black Pepper

For the Cheesy Filling

  • 1 cup Mozzarella Cheese creamy and melty
  • 1/2 cup Parmesan Cheese adds a sharp flavor
  • 1 cup Spinach optional, can be swapped with other herbs

For the Topping

  • 1 cup Marinara Sauce for topping

Instructions

Steps

  • Preheat your oven to 375°F (190°C).
  • Combine the ground beef, breadcrumbs, eggs, garlic powder, onion powder, Italian seasoning, salt, and pepper in a large bowl.
  • Mix gently until just combined.
  • In a separate bowl, mix together the mozzarella cheese, Parmesan cheese, and spinach.
  • Flatten the meat mixture into a large rectangle, spread the cheesy filling evenly, and roll it up tightly.
  • Place seam-side down in a baking dish and bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
  • In the last 10 minutes, spread the marinara sauce on top.
  • Remove from the oven and let it rest for 10 minutes before slicing.
  • Slice and serve with extra marinara sauce or sides of your choice.

Notes

Garnish with fresh parsley for added flavor and presentation.
