How to Make Breakfast Club Sandwich

  • Preheat your oven to 425°F. While it heats, line a baking sheet with parchment paper to prepare for the bacon.
  • Lay thick-cut bacon on the lined sheet and bake in the preheated oven for 25-30 minutes, or until crispy. Drain bacon on paper towels.
  • In a skillet over medium heat, form sausage into patties slightly larger than the bread slices. Cook for 3-4 minutes on each side until browned, adding cheese on top in the last minute to melt.
  • Melt unsalted butter in the same skillet before adding large eggs, scrambling gently and seasoning with kosher salt and black pepper.
  • Spread cowboy butter on slices of toasted white bread. Layer sausage patty, crispy bacon, avocado, and scrambled eggs. Top with another slice of buttered bread.
  • Cut each sandwich into triangles, secure with toothpicks, and serve immediately.
