How to Make Breakfast Chili and Eggs
In a Dutch oven, cook the center cut bacon over medium heat until it's crispy and fully cooked. Transfer the bacon to a paper towel to drain, leaving the grease in the pot.
Using the remaining bacon grease, add the diced white onion and chopped poblano or bell pepper. Sauté for 2-3 minutes until they soften, then add minced garlic and cook until fragrant.
Crumble the turkey breakfast sausage into the pot and cook, stirring occasionally, until browned, about 5-7 minutes.
Add the chopped bacon back into the pot along with the chili seasoning, fire-roasted crushed tomatoes, and beef broth. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low. Simmer for 45-60 minutes, allowing all the flavors to meld beautifully.
If you wish to add baked eggs on top, reserve some chili. Crack eggs gently over the reserved chili, and bake in the oven at 400°F for 12-15 minutes until set to your liking.
