How to Make Breakfast Chili and Eggs

  • In a Dutch oven, cook the center cut bacon over medium heat until it's crispy and fully cooked. Transfer the bacon to a paper towel to drain, leaving the grease in the pot.
  • Using the remaining bacon grease, add the diced white onion and chopped poblano or bell pepper. Sauté for 2-3 minutes until they soften, then add minced garlic and cook until fragrant.
  • Crumble the turkey breakfast sausage into the pot and cook, stirring occasionally, until browned, about 5-7 minutes.
  • Add the chopped bacon back into the pot along with the chili seasoning, fire-roasted crushed tomatoes, and beef broth. Stir well to combine.
  • Bring the mixture to a boil, then reduce the heat to low. Simmer for 45-60 minutes, allowing all the flavors to meld beautifully.
  • If you wish to add baked eggs on top, reserve some chili. Crack eggs gently over the reserved chili, and bake in the oven at 400°F for 12-15 minutes until set to your liking.

Notes
