Making the Gourmet Blueberry Grilled Cheese

  • Make the Compote: In a saucepan, combine fresh blueberries, white sugar, lemon juice, and lemon thyme. Bring to a gentle boil, then let it simmer for about 20 minutes until thickened. Allow it to cool for easy spreading.
  • Prepare the Sandwiches: Spread a generous layer of the cooled blueberry compote on four slices of quality bread. Top each slice with a mix of shredded white cheddar and mozzarella cheese, then cover with the remaining bread slices.
