Ingredients

  • 1/2 cup Milk whole or plant-based
  • 1 tbsp Baking Powder
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1/4 tsp Cayenne Pepper optional, adjust to taste
  • 2 tbsp Chopped Green Onions
  • 1/2 cup Grated Cheddar Cheese

For Frying and Assembly

  • 2 tbsp Oil for Frying canola or vegetable oil recommended
  • 2 large Eggs for sandwich
  • 4 slices Crispy Bacon or Sausage Patties optional
  • 1 medium Sliced Avocado
  • 1 cup Fresh Arugula
  • to taste Hot Sauce optional

Preparation

  • In a large bowl, gently mix together fresh sweet corn, flour, egg, milk, baking powder, salt, black pepper, cayenne, green onions, and cheese until just combined. The batter should be thick and well-mixed; avoid overmixing for light fritters.
  • Heat oil in a skillet over medium heat. Drop spoonfuls of your batter into the hot oil, cooking for about 3-4 minutes on each side until they are golden brown and crispy. Once cooked, drain them on paper towels.
  • In the same skillet, fry large eggs to your liking; sunny-side-up or scrambled works best for these sandwiches, adding richness and flavor to the dish.
  • Place a fritter as your base, then layer on a fried egg, optional crispy bacon or sausage, slices of creamy avocado, and a handful of fresh arugula. Top it all off with another fritter to complete your sandwich.
