Preparation
Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin to prevent sticking.
Cook the breakfast sausage in a skillet over medium heat, then crumble it into bite-sized pieces and drain excess grease.
Combine crumbled sausage, thawed shredded hashbrowns, cheddar cheese, chopped green onions, large eggs, salt, and pepper in a large bowl and mix well.
Distribute the mixture evenly into the muffin tin cups, filling each one about 3/4 full.
Bake for 20-25 minutes until golden brown and set. Check doneness with a toothpick.
Cool the bites for a few minutes in the tin before carefully removing them. Serve warm.
