  • 2 cups Frozen Shredded Hash Browns Thaw before use to prevent excess moisture.

  • 1/4 cup Chopped Green Onions Can be swapped with chives or omitted.
  • 4 Large Eggs Go for organic eggs when possible for better flavor.

Preparation

  • Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin to prevent sticking.
  • Cook the breakfast sausage in a skillet over medium heat, then crumble it into bite-sized pieces and drain excess grease.
  • Combine crumbled sausage, thawed shredded hashbrowns, cheddar cheese, chopped green onions, large eggs, salt, and pepper in a large bowl and mix well.
  • Distribute the mixture evenly into the muffin tin cups, filling each one about 3/4 full.
  • Bake for 20-25 minutes until golden brown and set. Check doneness with a toothpick.
  • Cool the bites for a few minutes in the tin before carefully removing them. Serve warm.

Notes

Optional: Drizzle with hot sauce for added flavor. Store leftovers in an airtight container for up to 3-4 days in the fridge or freeze for 2-3 months.
