Ingredients

For the Topping

  • 1 tablespoon Non-stick cooking spray
  • 1 tablespoon Unsalted butter, cold
  • 6 teaspoons Light brown sugar
  • 3 pieces Fresh peaches Sliced

For the Cake Batter

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.67 cups Granulated sugar
  • 0.33 cups Unsalted butter, at room temperature
  • 1 large Egg, at room temperature
  • 1 teaspoon Pure vanilla extract
  • 0.5 cups Buttermilk, at room temperature

Instructions

Preparation

  • Preheat your oven to 350°F (177°C).
  • Cut cold butter into 12 equal pieces and place them in the muffin cups. Sprinkle ½ teaspoon brown sugar into each cup before adding sliced peaches, arranging them nicely.
  • In a mixing bowl, whisk together flour, baking powder, baking soda, and salt until well combined.
  • In another bowl, beat the room temperature butter and granulated sugar for about 2 minutes until fluffy. Add the egg and vanilla; continue mixing until everything is well incorporated.
  • Gradually add in the flour mixture, alternating with the buttermilk until just combined. Fold in the cubed peaches.
  • Divide the batter evenly into the prepared muffin cups, ensuring each one is about three-quarters full.
  • Bake for 25-30 minutes until a toothpick inserted into the center comes out clean.
  • Cool in the pan for 5 minutes, then carefully run a knife around the edges to loosen the cakes before inverting onto a wire rack.
