Ingredients

For the Crust

  • 2 cups Graham Cracker Crumbs Can swap with crushed digestive biscuits
  • 1/2 cup Butter (melted) Can substitute with margarine or coconut oil

For the Lemon Layer

  • 8 oz Cream Cheese (room temperature) Use full-fat for best texture
  • 1/2 cup Granulated Sugar Sugar alternative can be used
  • 1/4 cup Lemon Juice Freshly squeezed is recommended
  • 1 cup 2% Milk Whole milk enhances richness
  • 1 pkg Instant Lemon Pudding Mix Can use vanilla pudding with lemon zest as a substitute

For the Blueberry Layer

  • 1 can Blueberry Pie Filling Homemade compote is a less sweet option

For the Topping

  • 8 oz Frozen Whipped Topping (Cool Whip, thawed) Homemade whipped cream can be used

Instructions

Directions

  • In a bowl, mix graham cracker crumbs with melted butter until well combined. Press mixture into the bottom of a 13 x 9 dish. Chill in the refrigerator for about 15 minutes to set.
  • Beat cream cheese and granulated sugar together until fluffy. Gradually add lemon juice and milk, mixing thoroughly. Stir in instant lemon pudding mix until smooth.
  • Spread lemon mixture evenly over the chilled graham cracker crust.
  • Spoon blueberry pie filling gently over the lemon layer. Spread evenly, maintaining distinct layers.
  • Spread thawed whipped topping over the blueberry layer, creating a smooth surface. Sprinkle reserved graham cracker crumbs on top.
  • Chill dessert in the refrigerator for at least 2 hours, or overnight, to allow layers to set.

Notes

Optional: Garnish with fresh blueberries or lemon zest before serving.
