  • 3 cups Rotisserie Chicken Leftover cooked chicken can also be a time-saver.
  • 1 cup Crispy Fried Onions Optional but highly recommended for added flavor.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and generously grease a 9x13 casserole dish.
  • Mix the cream of chicken soup, sour cream, chicken stock, garlic, salt, pepper, and all-purpose seasoning in the casserole dish until smooth.
  • Stir in the fresh spinach, rotisserie chicken, half of the Monterey Jack cheese, and dry orzo until everything is well combined.
  • Spread the remaining cheese on top and layer with crispy fried onions for added texture.
  • Cover the dish with foil and bake for 25 minutes. Then uncover and continue baking for an additional 10-15 minutes until the top is golden brown and bubbly.

Notes

Garnish with fresh parsley for a pop of color and added freshness. Store leftovers in an airtight container for up to 4 days, and reheat with a splash of chicken stock to keep the orzo moist and flavorful.
