Ingredients

For the Beef Bites

  • 2 pounds beef stew meat cut into bite-sized pieces
  • 4 tablespoons unsalted butter can substitute with olive oil
  • 4 cloves garlic minced
  • to taste salt for seasoning
  • to taste black pepper for seasoning

For the Potatoes

  • 1.5 pounds baby potatoes halved

For the Seasoning

  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

For Cooking

  • 1 cup beef broth low-sodium preferred
  • 2 tablespoons olive oil for searing

Instructions

Preparation Steps

  • Gather ingredients and cut beef stew meat into bite-sized pieces and halve the baby potatoes.
  • If desired, parboil the halved potatoes for 5-7 minutes for softer texture.
  • In a skillet, heat olive oil over medium-high heat. Sear beef until browned, about 5-7 minutes.
  • In a bowl, mix melted butter, minced garlic, onion powder, smoked paprika, thyme, rosemary, salt, and pepper.
  • Place halved potatoes in slow cooker, followed by seared beef. Drizzle garlic butter sauce on top.
  • Pour beef broth and stir gently, cover, and cook on low for 6-8 hours or high for 3-4 hours.
  • Allow to rest for 10 minutes before serving.

Notes

Garnish with fresh parsley for added color. Customize with different vegetables as per your taste.
