Instructions
How to Make Healthy Crock Pot Side Dishes: Korean Beef
Trim any excess fat from your chuck roast. Whisk together soy sauce, brown sugar, honey, sesame oil, rice vinegar, ginger, garlic, red pepper flakes, and black pepper in a bowl. Stir in the sliced onion until well coated.
Place the chuck roast on top of the prepared sauce and onion mixture in your slow cooker. Make sure the meat is thoroughly submerged.
Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is very tender.
Once done, carefully remove the chuck roast and shred it into bite-sized pieces. Thicken the sauce if desired using cornstarch slurry.
Return the shredded beef back to the sauce and simmer for an additional 10-15 minutes. Serve over cooked rice, garnished with green onions and sesame seeds.
Notes
Check tenderness early and adjust the heat as needed. Store leftovers in the refrigerator for up to 3 days, or freeze for up to 3 months.
