Instructions

How to Make Healthy Crock Pot Side Dishes: Korean Beef

  • Trim any excess fat from your chuck roast. Whisk together soy sauce, brown sugar, honey, sesame oil, rice vinegar, ginger, garlic, red pepper flakes, and black pepper in a bowl. Stir in the sliced onion until well coated.
  • Place the chuck roast on top of the prepared sauce and onion mixture in your slow cooker. Make sure the meat is thoroughly submerged.
  • Cover and cook on low for 8-10 hours or on high for 4-5 hours, until the beef is very tender.
  • Once done, carefully remove the chuck roast and shred it into bite-sized pieces. Thicken the sauce if desired using cornstarch slurry.
  • Return the shredded beef back to the sauce and simmer for an additional 10-15 minutes. Serve over cooked rice, garnished with green onions and sesame seeds.

Notes

Check tenderness early and adjust the heat as needed. Store leftovers in the refrigerator for up to 3 days, or freeze for up to 3 months.
