  • 2 cans Canned Beans (Black or Pinto) rinsed

  • 1 can Diced Tomatoes or crushed tomatoes for thicker sauce
  • 1 cup Bell Peppers diced, mixed colors
  • 1 medium Onion diced, sweet onions preferred

For the Casserole Layering

  • 4 cups Tortilla Chips or crushed chips
  • 2 cups Cheddar Cheese or dairy-free cheese for a vegan option

For Toppings

  • 1/4 cup Fresh Cilantro or parsley
  • 1 cup Sour Cream or Greek yogurt
  • 1/2 cup Sliced Jalapeños omit for a milder flavor

  • Start by measuring out your ground meat, taco seasoning, and canned beans. Chop your bell peppers and onion into bite-sized pieces.
  • In your crockpot, begin with a layer of tortilla chips.
  • Brown the beef in a skillet over medium heat until fully cooked. Drain excess fat and stir in taco seasoning. Layer evenly on top of the tortilla chips.
  • Distribute the diced tomatoes, bell peppers, and onion over the meat layer.
  • Pour your rinsed canned beans over the vegetables.
  • Sprinkle cheddar cheese over the top layer.
  • Cover your crockpot and set it on low for 6-8 hours or high for 3-4 hours.
  • Once finished cooking, sprinkle fresh cilantro, sliced jalapeños, and a dollop of sour cream on top before serving.
