Start by measuring out your ground meat, taco seasoning, and canned beans. Chop your bell peppers and onion into bite-sized pieces.
In your crockpot, begin with a layer of tortilla chips.
Brown the beef in a skillet over medium heat until fully cooked. Drain excess fat and stir in taco seasoning. Layer evenly on top of the tortilla chips.
Distribute the diced tomatoes, bell peppers, and onion over the meat layer.
Pour your rinsed canned beans over the vegetables.
Sprinkle cheddar cheese over the top layer.
Cover your crockpot and set it on low for 6-8 hours or high for 3-4 hours.
Once finished cooking, sprinkle fresh cilantro, sliced jalapeños, and a dollop of sour cream on top before serving.
