Ingredients

For the Batter

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1.75 cups milk whole milk is preferable
  • 2 large eggs
  • 0.25 cup unsalted butter melted
  • 1 teaspoon vanilla extract

For the Mix-Ins

  • 0.5 cup optional mix-ins e.g. chocolate chips, berries, bananas

Instructions

Preparation

  • In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well.
  • In a separate bowl, whisk together the milk, large eggs, melted unsalted butter, and vanilla extract until smooth.
  • Gently pour the wet ingredients into the dry ingredients. Carefully fold until just combined; it's okay if there are a few lumps. Add your chosen mix-ins at this stage.
  • Preheat your oven to 375°F (190°C) and grease a mini muffin tin. Fill each cavity about ¾ full with the batter.
  • Place the muffin tin in the oven and bake for 12–15 minutes, or until golden brown.
  • Allow the poppers to rest in the pan for 5 minutes before gently removing them.

Notes

Pair with maple syrup, powdered sugar, or your favorite toppings for serving.
