In a large bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. Mix well.
In a separate bowl, whisk together the milk, large eggs, melted unsalted butter, and vanilla extract until smooth.
Gently pour the wet ingredients into the dry ingredients. Carefully fold until just combined; it's okay if there are a few lumps. Add your chosen mix-ins at this stage.
Preheat your oven to 375°F (190°C) and grease a mini muffin tin. Fill each cavity about ¾ full with the batter.
Place the muffin tin in the oven and bake for 12–15 minutes, or until golden brown.
Allow the poppers to rest in the pan for 5 minutes before gently removing them.
