Instructions

Making the Pancake Poppers

  • Preheat your oven to 375°F (190°C) and lightly grease a mini muffin tin.
  • In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • In a separate bowl, mix the milk, eggs, melted butter, and vanilla extract.
  • Carefully pour the wet mixture into the dry ingredients and fold together gently.
  • Gently fold in your selected mix-ins.
  • Spoon the batter into each muffin tin cavity, filling them about ¾ full.
  • Place in the preheated oven and bake for 12–15 minutes.
  • Let them cool in the tin for about 5 minutes.
  • Transfer to a wire rack and serve warm.
