Ingredients

For the Base

  • 2 cups Old-Fashioned Oats or quick oats for a softer texture
  • 1 cup All-Purpose Flour or gluten-free flour blend
  • 3/4 cup Light Brown Sugar or honey/maple syrup for a natural sweetener
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon optional, can swap with nutmeg

For the Wet Ingredients

  • 1/2 cup Unsalted Butter (melted) or coconut oil for a dairy-free alternative
  • 1 teaspoon Vanilla Extract

For the Blueberry Filling

  • 2 cups Blueberries (fresh or frozen) or raspberries/strawberries
  • 1/4 cup Granulated Sugar adjust for tartness of berries
  • 1 tablespoon Cornstarch or arrowroot powder

Directions

  • Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  • In a large bowl, mix the old-fashioned oats, all-purpose flour, light brown sugar, baking soda, salt, and optional cinnamon.
  • Stir in the melted unsalted butter and vanilla extract until the mixture resembles coarse crumbs.
  • Press half of the oat mixture evenly into the prepared pan.
  • In another bowl, toss the blueberries with granulated sugar and cornstarch. Spread this over the oat base.
  • Crumble the remaining oat mixture over the blueberries.
  • Bake for 35-40 minutes until the top is golden brown and the filling is bubbly.
  • Allow to cool completely in the pan before lifting out and cutting into 12 squares.

Notes
