Directions
Preheat your oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
In a large bowl, mix the old-fashioned oats, all-purpose flour, light brown sugar, baking soda, salt, and optional cinnamon.
Stir in the melted unsalted butter and vanilla extract until the mixture resembles coarse crumbs.
Press half of the oat mixture evenly into the prepared pan.
In another bowl, toss the blueberries with granulated sugar and cornstarch. Spread this over the oat base.
Crumble the remaining oat mixture over the blueberries.
Bake for 35-40 minutes until the top is golden brown and the filling is bubbly.
Allow to cool completely in the pan before lifting out and cutting into 12 squares.
Notes
