Begin by selecting your favorite method for boiling eggs—whether it's on the stovetop, in an Instant Pot, or by steaming. Ensure they are hard-boiled for perfect filling.
Once your eggs are boiled, let them cool completely. Carefully peel the shells and slice each egg in half lengthwise, gently removing the yolks for later use.
In a medium mixing bowl, combine the egg yolks with mayonnaise, Dijon mustard, fresh lemon juice, sea salt, black pepper, smoked paprika, and crème fraîche. Use a hand mixer to create a smooth, fluffy filling that’s bursting with flavor.
To fill the egg whites, transfer the yolk mixture into a zip-top bag fitted with a star tip. Pipe the creamy filling generously into each egg half until they are beautifully filled.
