  • 2 cups fresh strawberries
  • 1 cup unsweetened vanilla almond milk can be replaced with dairy milk or any nut milk
  • 1 cup Greek yogurt plant-based yogurt works for vegans
  • 1/4 cup chia seeds can use ground flaxseeds if desired
  • 2 tablespoons maple syrup adjust sweetness based on strawberry sweetness
  • 1 teaspoon vanilla extract can use vanilla essence for a twist

Optional Toppings

  • 1 cup additional strawberries add any other fruits based on preference
  • 1/2 cup nuts or granola your favorite mix will elevate this pudding

Instructions

How to Make Creamy Strawberry Chia Pudding

  • In a blender, combine sliced strawberries, almond milk, Greek yogurt, and vanilla extract. Blend until smooth and creamy, ensuring no strawberry chunks remain—this will take about 30 seconds.
  • In a large mixing bowl, combine the blended mixture with chia seeds. Whisk until evenly mixed, giving the chia seeds a chance to absorb the liquid for that ultimate pudding texture.
  • Add maple syrup to taste and whisk until combined. Remember to adjust sweetness based on how sweet your strawberries are.
  • Refrigerate for at least 4 hours, but preferably overnight, until it thickens into a luscious pudding-like consistency.
  • Once chilled, serve in individual cups or bowls, optionally topped with additional strawberries or a sprinkle of nuts.

Notes

Garnish with a dollop of extra Greek yogurt for an added creamy layer. Store in an airtight container in the fridge for up to 5 days.
