In a blender, combine sliced strawberries, almond milk, Greek yogurt, and vanilla extract. Blend until smooth and creamy, ensuring no strawberry chunks remain—this will take about 30 seconds.
In a large mixing bowl, combine the blended mixture with chia seeds. Whisk until evenly mixed, giving the chia seeds a chance to absorb the liquid for that ultimate pudding texture.
Add maple syrup to taste and whisk until combined. Remember to adjust sweetness based on how sweet your strawberries are.
