Ingredients

For the Stew

  • 2 pounds beef marbled cut
  • 4 cups root vegetables carrots, potatoes or turnips
  • 1 cup red wine or beef broth for non-alcoholic
  • 4 cloves garlic minced
  • 1 large onion chopped
  • 6 cups beef broth
  • 2 teaspoons herbs thyme, bay leaves
  • 1 teaspoon salt adjust to taste
  • 1 teaspoon pepper adjust to taste

For the Cauldron Presentation

  • 1 medium pumpkin to serve stew
  • 1/2 cup black olives for garnish
  • 1/4 cup parsley chopped for garnish

Instructions

Main Instructions

  • Sauté onion and garlic in oil over medium heat for 4-5 minutes until translucent.
  • Brown the beef chunks on all sides for 6-8 minutes over medium-high heat.
  • Deglaze the pot with red wine, scraping the bottom for flavor; simmer for 2-3 minutes.
  • Add root vegetables, herbs, salt, and pepper; cook for 5 minutes.
  • Pour in beef broth, bring to a boil, then reduce to a simmer for 1.5 to 2 hours.
  • While the stew simmers, prepare the pumpkin by carving out the top and removing the insides.
  • Taste the stew and adjust seasoning as needed.
  • Serve the stew in the carved pumpkin and garnish with black olives and parsley.

Notes

Optional: Serve with crusty bread for dipping into the magical broth.
