  • 1/4 tsp Ground nutmeg optional
  • 1/4 tsp Salt

  • 1 cup Milk or almond/soy milk
  • 2 tbsp Unsalted butter or melted coconut oil
  • 1 tsp Vanilla extract opt for pure extract
  • 1 medium Apple (Granny Smith or Honeycrisp) chop into bite-sized pieces

Instructions

How to Make Warm & Fluffy Apple Cinnamon Pancakes

  • In a large bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, nutmeg, salt, and granulated sugar until everything is well combined.
  • In a separate bowl, mix together the large egg, milk, melted unsalted butter, and vanilla extract until fully blended.
  • Gently fold the wet ingredients into the dry mixture until just combined, ensuring not to overmix.
  • Carefully fold in the diced apple, distributing them evenly throughout the batter.
  • Allow the batter to rest for 5-10 minutes to enhance the fluffiness of your pancakes.
  • Preheat a lightly oiled griddle or non-stick skillet over medium heat until a drop of water sizzles on contact.
  • Pour ¼ cup of batter for each pancake onto the griddle, cooking until bubbles form on the surface, then flip them over.
  • Cook the second side until golden brown, about 2-3 minutes.
  • Transfer pancakes to an oven set to low heat to keep them warm while cooking the remaining batter.
  • Serve with optional toppings such as maple syrup, fresh berries, or whipped cream.

Notes

Allowing the batter to rest improves fluffiness; adjust skillet heat as needed to prevent burning.
