Steps

  • Peel and chop the russet potatoes, then place them in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  • Drain the potatoes and return them to the pot. Use a potato masher to mash until completely smooth and fluffy.
  • Incorporate the butter, heavy cream, egg yolks, salt, black pepper, and nutmeg. Stir until fully blended.
  • Spoon the potato mixture into a piping bag fitted with a star tip. Pipe decorative swirls onto a greased baking sheet.
  • Preheat your oven to 400°F (200°C). Bake for about 25 minutes until the tops are golden brown and crispy.
