Preparation
Mix the brioche dough ingredients in a large bowl. Knead until smooth and elastic, about 10 minutes. Let the dough rise in a warm spot for 1-2 hours or refrigerate overnight.
Peel and chop the apples. Cook them in a saucepan with sugar and cinnamon until tender, about 10 minutes. Allow the filling to cool.
Roll out the risen dough into a large rectangle. Spread the brown sugar and cinnamon mixture evenly. Top with the apple filling and sprinkle with toasted pecans.
Roll the dough tightly from the long side into a log. Slice into 12 even pieces and place in a greased baking dish.
Let the cut rolls rise again in a warm area for 30-45 minutes until puffy and fluffy.
Preheat oven to 350°F (175°C). Bake for 25-30 minutes until golden brown.
While cooling, whip up the cream cheese frosting and top the warm rolls generously.
Notes
