Instructions
Cookie Preparation
In a mixing bowl, beat the room temperature butter until it's creamy and luscious. Add the vegetable oil, granulated sugar, and powdered sugar, mixing until well combined. Then, introduce the egg and vanilla extract for extra flavor and richness.
In another bowl, whisk together the all-purpose flour, baking soda, kosher salt, and the contents of one chai tea bag.
Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
Cover the cookie dough with plastic wrap and chill it in the refrigerator for at least 1 hour.
Preheat your oven to 350°F (175°C). Scoop tablespoon-sized balls of dough onto a lined baking sheet and flatten slightly. Bake for 9-10 minutes, until the edges turn golden brown. Let them cool for about 5 minutes before transferring to a wire rack.
In a bowl, whisk together the powdered sugar, ground nutmeg, ground cinnamon, and eggnog until you achieve a smooth consistency.
Once the cookies have cooled, spread the eggnog icing generously on top using the back of a spoon.
