Ingredients

For the Cookie Batter

  • 1 cup Unsalted Butter room temperature
  • 1/4 cup Vegetable Oil
  • 1 cup Granulated Sugar
  • 1 cup Powdered Sugar for the icing
  • 1 large Egg
  • 1 teaspoon Vanilla Extract pure preferred
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Kosher Salt
  • 1 teabag Chai Tea Leaves use contents

For the Eggnog Icing

  • 1 cup Powdered Sugar adjust for thickness
  • 1/2 teaspoon Ground Nutmeg
  • 1/2 teaspoon Ground Cinnamon
  • 3 tablespoons Eggnog or milk

Instructions

Cookie Preparation

  • In a mixing bowl, beat the room temperature butter until it's creamy and luscious. Add the vegetable oil, granulated sugar, and powdered sugar, mixing until well combined. Then, introduce the egg and vanilla extract for extra flavor and richness.
  • In another bowl, whisk together the all-purpose flour, baking soda, kosher salt, and the contents of one chai tea bag.
  • Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
  • Cover the cookie dough with plastic wrap and chill it in the refrigerator for at least 1 hour.
  • Preheat your oven to 350°F (175°C). Scoop tablespoon-sized balls of dough onto a lined baking sheet and flatten slightly. Bake for 9-10 minutes, until the edges turn golden brown. Let them cool for about 5 minutes before transferring to a wire rack.
  • In a bowl, whisk together the powdered sugar, ground nutmeg, ground cinnamon, and eggnog until you achieve a smooth consistency.
  • Once the cookies have cooled, spread the eggnog icing generously on top using the back of a spoon.

Notes

Allow cookies to cool completely before icing. Customize with festive sprinkles if desired.
