Homestyle Meatloaf

This moist and flavorful meatloaf is topped with a sweet and tangy glaze, reminiscent of Cracker Barrel's down-home comfort food.

Ingredients

For the Meatloaf

  • 2 lbs ground beef
  • 1 small onion, finely diced
  • 1/2 cup green bell pepper, finely diced (optional but classic!) Optional ingredient for added flavor and texture.
  • 2 large eggs Bind the meatloaf ingredients.
  • 1 cup crushed Ritz crackers (or saltines) Acts as a binder.
  • 1/2 cup milk Adds moisture to the meatloaf.
  • 1 1/2 cups shredded cheddar cheese Can be swapped for pepper jack for a spicy twist.
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Glaze

  • 1/2 cup ketchup
  • 1/4 cup brown sugar Adds sweetness to the glaze.
  • 1 tsp yellow mustard

Instructions

Preparation

  • Preheat oven to 350°F (175°C). Grease a 9x5” loaf pan or line a baking sheet with parchment.
  • In a large bowl, mix together all meatloaf ingredients until well combined – don’t overmix!
  • Shape the meat mixture into a loaf and place into the pan or on the sheet.

Cooking

  • In a small bowl, mix glaze ingredients until smooth.
  • Spread half the glaze over the meatloaf.
  • Bake for 30 minutes, then spread the remaining glaze on top.
  • Continue baking for another 20–30 minutes, or until internal temp reaches 160°F (71°C).
  • Let rest for 10 minutes before slicing and serving.

Notes

Pair it with mashed potatoes, green beans, or mac & cheese for the full comfort meal. Leftovers make amazing sandwiches! Swap cheddar for pepper jack if you want a little kick.
