Ingredients
For the Meatloaf
2lbsground beef
1smallonion, finely diced
1/2cupgreen bell pepper, finely diced (optional but classic!)Optional ingredient for added flavor and texture.
2largeeggsBind the meatloaf ingredients.
1cupcrushed Ritz crackers (or saltines)Acts as a binder.
1/2cupmilkAdds moisture to the meatloaf.
1 1/2cupsshredded cheddar cheeseCan be swapped for pepper jack for a spicy twist.
1tspsalt
1/2tspblack pepper
For the Glaze
1/2cupketchup
1/4cupbrown sugarAdds sweetness to the glaze.
1tspyellow mustard
Instructions
Preparation
Preheat oven to 350°F (175°C). Grease a 9x5” loaf pan or line a baking sheet with parchment.
In a large bowl, mix together all meatloaf ingredients until well combined – don’t overmix!
Shape the meat mixture into a loaf and place into the pan or on the sheet.
Cooking
In a small bowl, mix glaze ingredients until smooth.
Spread half the glaze over the meatloaf.
Bake for 30 minutes, then spread the remaining glaze on top.
Continue baking for another 20–30 minutes, or until internal temp reaches 160°F (71°C).
Let rest for 10 minutes before slicing and serving.
Notes
Pair it with mashed potatoes, green beans, or mac & cheese for the full comfort meal. Leftovers make amazing sandwiches! Swap cheddar for pepper jack if you want a little kick.
