Ingredients

Cookie Dough Ingredients

  • 1 cup sweet cream unsalted butter (room temperature) Make sure butter is at room temperature.
  • ¾ cup granulated sugar
  • cup packed brown sugar
  • 2 large eggs (room temperature)
  • 1 teaspoon pure vanilla extract
  • cups all-purpose flour (sifted)
  • cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt

Decoration Ingredients

  • 16 ounces white frosting (store-bought or homemade) Warm slightly in microwave before using.
  • 5 drops neon green gel food coloring Add to frosting for color.
  • 1 cup M&M candies (orange, green, and purple) Half for dough, half for decoration.

Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  • Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
  • Gradually mix the dry ingredients into the wet ingredients until just combined.
  • Gently fold in half of the M&M's into the dough.
  • Roll the dough into balls, about 2 tablespoons each, and place on the baking sheet. Press the remaining M&M's on top.

Baking

  • Bake cookies for 9 to 11 minutes. The edges should be set while the centers remain soft.
  • Cool cookies on a wire rack.

Frosting

  • Microwave the frosting for about 15 seconds to make it easier to work with. Stir in the neon green food coloring.
  • Once cookies are cool, inject or spoon the green frosting into the centers of the cookies.

Notes

For best results, do not overbake cookies; they should be slightly underdone in the centers. You can customize frosting and M&M colors for different holidays.
