Instructions
Preparation
Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
Add the eggs one at a time, beating well after each addition, and then stir in the vanilla extract.
Gradually mix the dry ingredients into the wet ingredients until just combined.
Gently fold in half of the M&M's into the dough.
Roll the dough into balls, about 2 tablespoons each, and place on the baking sheet. Press the remaining M&M's on top.
Baking
Bake cookies for 9 to 11 minutes. The edges should be set while the centers remain soft.
Cool cookies on a wire rack.
Frosting
Microwave the frosting for about 15 seconds to make it easier to work with. Stir in the neon green food coloring.
Once cookies are cool, inject or spoon the green frosting into the centers of the cookies.
Notes
For best results, do not overbake cookies; they should be slightly underdone in the centers. You can customize frosting and M&M colors for different holidays.
