Instructions
Preparation
Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper.
In a medium bowl, combine flour, granulated sugar, and salt. Cut in cold butter until the mixture resembles coarse crumbs. Press this mixture into the bottom of the prepared pan and bake for 15–18 minutes.
In a large bowl, mix sliced peaches with brown sugar, flour, lemon juice, and vanilla extract. Let it sit for a few minutes.
In another bowl, whisk together flour, granulated sugar, brown sugar, cinnamon, and salt. Stir in melted butter until crumbly.
Spread the peach mixture evenly over the baked crust. Sprinkle the crumb topping generously over the peaches.
Place the whole pan back in the oven and bake for an additional 45–50 minutes.
Allow the bars to cool on a wire rack for about 15 minutes before lifting them out and cutting into squares.
Serve warm with a scoop of vanilla ice cream if desired.
