Heat oil in a large skillet over medium heat.
Add sliced potatoes in an even layer and let them cook undisturbed for 4–5 minutes until the bottoms start to crisp.
Add the sliced onions on top, then season with salt, pepper, and any other favorite seasonings.
Gently flip and stir the potatoes and onions every few minutes to cook evenly. You want them golden and tender—not mushy!
Cook for 20–25 minutes, or until potatoes are crispy on the outside and soft inside.
Taste and adjust seasoning if needed. Serve hot!
