Ingredients

For the Chicken

  • 4 pieces Chicken Breasts Can substitute with chicken thighs or firm tofu.

For the Sauté

  • 2 tablespoons Olive Oil Use high-quality extra virgin olive oil.
  • 1 medium Red Onion Yellow onion can be used if needed.
  • 3 cloves Garlic Fresh is best, but garlic powder can substitute.
  • 2 cups Bell Peppers Any variety can be used.

For the Juiciness

  • 1 cup Cherry Tomatoes Canned diced tomatoes can substitute.

For the Seasoning

  • 1 teaspoon Dried Oregano Can be replaced with basil or Italian seasoning.
  • 2 tablespoons Lemon Juice Lime juice can be an excellent alternative.

For the Garnish

  • 1/4 cup Fresh Parsley Can use basil or cilantro instead.

Instructions

Cooking Steps

  • Season the chicken breasts with salt, pepper, paprika, and oregano.
  • Heat olive oil in a large skillet over medium-high heat. Cook the seasoned chicken for 6-7 minutes on each side until golden brown and cooked through. Remove and set aside.
  • In the same skillet, sauté the red onion, garlic, and bell peppers for about 3-4 minutes until tender and fragrant.
  • Add the cherry tomatoes and cook for another 2 minutes. Stir in dried oregano and lemon juice.
  • Return the chicken to the skillet, spooning the sautéed vegetables over the top. Cover and simmer for 5 minutes.
  • Garnish with fresh parsley before serving.

Notes

Optional: Drizzle with balsamic glaze for extra flavor. Ensure to check the chicken reaches an internal temperature of 165°F.
