Ingredients

  • 1 9-inch unbaked pastry shell
  • 1 lb fresh shrimp, peeled and deveined
  • 2 tbsp butter
  • 1 small onion, finely chopped
  • 1/2 cup green bell pepper, diced
  • 1/2 cup celery, diced
  • 2 cloves garlic, minced
  • 1/2 cup mayonnaise
  • 1/2 cup milk
  • 3 large eggs
  • 2 tsp lemon juice
  • 1 tsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 cup shredded sharp Cheddar cheese

Instructions

  • Preheat oven to 375°F (190°C). Place the unbaked pastry shell into a 9-inch pie dish and set on a baking sheet.
  • In a skillet, melt butter over medium heat. Add onion, bell pepper, celery, and garlic. Sauté until softened, about 5 minutes.
  • In a mixing bowl, whisk together mayonnaise, milk, eggs, lemon juice, Worcestershire sauce, salt, pepper, and cayenne until smooth.
  • Add sautéed vegetables and shrimp to the pie shell. Pour custard mixture evenly over the filling.
  • Sprinkle shredded Cheddar cheese over the top.
  • Bake uncovered for 40–45 minutes, or until pie is set and golden on top. Let cool slightly before slicing and serving.

Notes

Swap Cheddar with Monterey Jack, Gouda, or a blend for a flavor twist. Red bell pepper adds more color, and scallions brighten the dish. Add Cajun seasoning or hot sauce for extra spice. Leftovers reheat beautifully!
