How to Make Slow Cooker Parmesan Garlic Chicken and Potatoes

  • In your slow cooker, combine diced Yukon Gold or Russet potatoes with olive oil, 3/4 teaspoon of kosher salt, ground black pepper, and paprika. Stir well until the potatoes are evenly coated.
  • Place skinless, boneless chicken breasts on top of the seasoned potatoes. Sprinkle with the remaining salt and pepper to enhance flavor throughout the dish.
  • In a bowl, whisk together the creamy Parmesan garlic sauce and water (or chicken stock). Once combined, pour this luscious mixture over the chicken and potatoes, ensuring everything is well covered.
  • Set your slow cooker to High for 4 hours or Low for 6 hours. Cook until the chicken is tender and fully cooked, and the potatoes are soft.
  • In the last 20 minutes of cooking, sprinkle shredded mozzarella and optional grated Parmesan cheese on top. Cover and allow to finish cooking, letting the cheese melt beautifully.
