Ingredients

For the Base

  • 1 pound Italian Sausage Substitute with chicken or turkey sausage for a lighter option.
  • 1 can Diced Tomatoes Use canned for ease or fresh if in season.
  • 3 cups Chicken Broth Opt for low-sodium broth to control saltiness.

For the Creamy Sauce

  • 8 ounces Cream Cheese For a lighter option, use reduced-fat cream cheese.
  • 3 cloves Minced Garlic Fresh garlic is best, but garlic powder can work in a pinch.

For Flavoring

  • 1 tablespoon Italian Seasoning Substitute with a mix of oregano, basil, and thyme if unavailable.

For the Pasta

  • 20 ounces Cheese Tortellini Frozen is recommended for convenience.

For Freshness

  • 4 cups Fresh Spinach Can be substituted with kale or zucchini.

Instructions

Instructions

  • Brown the Sausage: In a skillet, brown Italian sausage over medium heat for 5-7 minutes, breaking it apart until fully cooked and nicely caramelized.
  • Transfer to Crockpot: Drain any excess fat from the skillet and carefully transfer the cooked sausage into the crockpot.
  • Combine Ingredients: Add diced tomatoes with their juice, minced garlic, Italian seasoning, and chicken broth to the crockpot. Stir gently to combine.
  • Add Cream Cheese: Cube the cream cheese and scatter it over the mixture in the crockpot.
  • Cover and Cook: Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours.
  • Mix in Tortellini and Spinach: About 30 minutes before serving, add the frozen tortellini and fresh spinach to the crockpot.
  • Adjust Seasoning: Once cooked, taste and adjust seasoning with salt and pepper as needed. Serve hot.

Notes

Serve with crusty bread for dipping or a light side salad for a refreshing contrast.
