Brown the Sausage: In a skillet, brown Italian sausage over medium heat for 5-7 minutes, breaking it apart until fully cooked and nicely caramelized.
Transfer to Crockpot: Drain any excess fat from the skillet and carefully transfer the cooked sausage into the crockpot.
Combine Ingredients: Add diced tomatoes with their juice, minced garlic, Italian seasoning, and chicken broth to the crockpot. Stir gently to combine.
Add Cream Cheese: Cube the cream cheese and scatter it over the mixture in the crockpot.
Cover and Cook: Cover the crockpot and cook on low for 4-5 hours or on high for 2-3 hours.
Mix in Tortellini and Spinach: About 30 minutes before serving, add the frozen tortellini and fresh spinach to the crockpot.
Adjust Seasoning: Once cooked, taste and adjust seasoning with salt and pepper as needed. Serve hot.
