Cinnamon Sugar Coating

  • 1 teaspoon cinnamon extra spice for rolling

Instructions

Making the Puffs

  • Preheat your oven to 350°F (175°C) and prep a 24-cavity mini muffin pan with baking spray.
  • Mix 1/2 cup granulated sugar with 1 teaspoon cinnamon in a small bowl for the coating.
  • Whisk together 1 1/2 cups all-purpose flour, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, and 1/4 teaspoon nutmeg until well combined.
  • Cream together 1/3 cup vegetable shortening and 1/2 cup granulated sugar until light and fluffy, then incorporate 1 egg.
  • Combine the dry ingredients with 1/2 cup milk and the creamed mixture, mixing gently until just combined.
  • Scoop the batter into your prepared muffin pan, filling each cavity about 2/3 full. Bake for 13-15 minutes.
  • Dip each warm puff in melted butter, then roll them in the cinnamon-sugar mixture while still warm.

Notes

For an extra special touch, top with fresh berries or whipped cream. To enjoy later, store in an airtight container for up to 2 days or freeze for up to 3 months and reheat before serving.
