Instructions
Prepare the Candy
In a large bowl, mix the mashed potatoes, powdered sugar, vanilla extract, and salt until smooth.
Transfer the mixture onto a surface dusted with powdered sugar and knead until smooth and pliable.
Split the dough into three equal parts for easier rolling and filling.
Roll one portion into a rectangle about 5x8 inches and ⅛ inch thick on a powdered sugar-dusted surface.
Spread 1.5 tablespoons of smooth peanut butter evenly across the rolled dough, leaving a small border.
Roll the dough tightly like a jelly roll and wrap in plastic wrap. Refrigerate for 30 minutes.
Repeat the process with the other dough portions until all rolls are made.
Unwrap and slice the rolls into ¼-inch pinwheels and serve at room temperature.
Notes
This candy can be made ahead and stored in an airtight container for up to 2 weeks. Optionally, drizzle with melted chocolate for extra flavor.
