Instructions
How to Make Healthy Sweet Potato Hash Browns
Preheat your oven to 350°F (175°C).
Grate the sweet potatoes using a box grater and place them in a bowl of cold water.
Squeeze out as much moisture as you can from the grated sweet potatoes using a clean kitchen towel.
Combine dried potatoes with finely chopped onions, eggs, flour, salt, and pepper.
Heat oil in a large skillet over medium heat.
Scoop heaping tablespoons of the mixture into the skillet, gently flattening them into patties.
Cook each side for 3-4 minutes or until golden brown.
Transfer cooked patties to a baking sheet and pop them in the oven for 10-12 minutes.
Serve hot with your favorite condiments.
