Ingredients

  • 2 medium Sweet Potatoes firm, smooth Beauregard varieties recommended
  • 1 medium Onion yellow or white
  • 2 large Eggs can substitute with flax eggs for vegan
  • 1/4 cup Flour gluten-free flour if needed
  • 1 teaspoon Salt adjust to taste
  • 1/2 teaspoon Pepper adjust to taste
  • 2 tablespoons Oil neutral or olive oil for frying

Instructions

How to Make Healthy Sweet Potato Hash Browns

  • Preheat your oven to 350°F (175°C).
  • Grate the sweet potatoes using a box grater and place them in a bowl of cold water.
  • Squeeze out as much moisture as you can from the grated sweet potatoes using a clean kitchen towel.
  • Combine dried potatoes with finely chopped onions, eggs, flour, salt, and pepper.
  • Heat oil in a large skillet over medium heat.
  • Scoop heaping tablespoons of the mixture into the skillet, gently flattening them into patties.
  • Cook each side for 3-4 minutes or until golden brown.
  • Transfer cooked patties to a baking sheet and pop them in the oven for 10-12 minutes.
  • Serve hot with your favorite condiments.
