Ingredients

For the Potato Stacks

  • 4 medium Russet or Yukon Gold Potatoes
  • 3 tablespoons Olive Oil or Melted Butter

For the Garlic Herb Mix

  • 1 teaspoon Garlic Powder or Minced Garlic
  • 2 sprigs Fresh Thyme
  • 2 sprigs Fresh Rosemary
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

For the Toppings

  • 1 cup Grated Parmesan Cheese Consider vegan cheese for a plant-based option.

Instructions

Preparation

  • Preheat your oven to between 375°F to 400°F, depending on how crispy you desire your potato stacks to be.
  • Lightly grease a muffin tin with olive oil or melted butter.
  • Wash, peel, and thinly slice the potatoes into 1/16 to 1/8-inch rounds.
  • In a large mixing bowl, toss the potato slices with olive oil or melted butter, garlic, thyme, rosemary, salt, and pepper.
  • Start layering the potato slices in the muffin tin, allowing them to slightly overhang the edges.
  • Cover the muffin tin with foil and bake for 20–30 minutes.
  • After 20–30 minutes, remove the foil and return the tin to the oven. Bake for an additional 15–30 minutes, or until edges are golden brown and crispy.
  • Let the stacks cool slightly before carefully removing them from the tin. Garnish with more Parmesan and fresh herbs, then serve warm and enjoy!

Notes

Optional: Drizzle with a touch of truffle oil before serving for a gourmet twist.
