Instructions
Preparation
Preheat your oven to between 375°F to 400°F, depending on how crispy you desire your potato stacks to be.
Lightly grease a muffin tin with olive oil or melted butter.
Wash, peel, and thinly slice the potatoes into 1/16 to 1/8-inch rounds.
In a large mixing bowl, toss the potato slices with olive oil or melted butter, garlic, thyme, rosemary, salt, and pepper.
Start layering the potato slices in the muffin tin, allowing them to slightly overhang the edges.
Cover the muffin tin with foil and bake for 20–30 minutes.
After 20–30 minutes, remove the foil and return the tin to the oven. Bake for an additional 15–30 minutes, or until edges are golden brown and crispy.
Let the stacks cool slightly before carefully removing them from the tin. Garnish with more Parmesan and fresh herbs, then serve warm and enjoy!
Notes
Optional: Drizzle with a touch of truffle oil before serving for a gourmet twist.
