Preparation Steps

  • Hard-boil the eggs: Place eggs in pot with water, cover, bring to a boil, then remove from heat and let sit for 7-8 minutes.
  • Cool the eggs: Transfer eggs to a bowl of ice water for about 2 minutes.
  • Prepare the egg mixture: Mash yolks with cottage cheese, mayonnaise, and mustard until creamy.
  • Mix in the whites: Chop remaining egg whites and fold them into the yolk mixture with scallions, salt, pepper, and red pepper flakes.
  • Season to taste: Adjust seasoning and sprinkle remaining red pepper flakes on top.
  • Chill for flavor: Cover and refrigerate for at least 30 minutes before serving.
