  • 1 teaspoon Pepper Adjust to taste
  • 1/4 cup Oil High smoke point oil like canola or vegetable

Instructions

How to Make Savory Sweet Potato Hash Browns

  • Preheat your oven to 350°F (175°C).
  • Coarsely grate the sweet potatoes and soak them in a bowl of cold water for about 15 minutes, then drain.
  • Squeeze out any excess moisture from the grated sweet potatoes.
  • In a mixing bowl, combine the grated sweet potatoes with finely chopped onions, eggs, flour, salt, and pepper. Stir until well incorporated.
  • Heat oil in a large skillet over medium heat.
  • Scoop the mixture into the skillet, pressing down gently to flatten each scoop into even patties.
  • Fry the patties for about 3-4 minutes on each side, or until golden brown.
  • Transfer to a baking sheet and bake for 10-12 minutes.
