Instructions
How to Make Savory Sweet Potato Hash Browns
Preheat your oven to 350°F (175°C).
Coarsely grate the sweet potatoes and soak them in a bowl of cold water for about 15 minutes, then drain.
Squeeze out any excess moisture from the grated sweet potatoes.
In a mixing bowl, combine the grated sweet potatoes with finely chopped onions, eggs, flour, salt, and pepper. Stir until well incorporated.
Heat oil in a large skillet over medium heat.
Scoop the mixture into the skillet, pressing down gently to flatten each scoop into even patties.
Fry the patties for about 3-4 minutes on each side, or until golden brown.
Transfer to a baking sheet and bake for 10-12 minutes.
Remove from the oven and serve immediately.
