Chicken

  • 1 lb chicken cutlets or air-fried chicken for healthier option
  • 1/2 cup all-purpose flour or gluten-free flour
  • 2 large eggs or flax egg for vegan option
  • 1 cup panko crumbs can substitute with traditional breadcrumbs

Assembly

  • 1 head romaine lettuce or kale/spinach
  • 1 loaf French baguette or ciabatta/sourdough
  • 1/4 cup Parmesan cheese for topping

Preparation

  • Prepare Caesar Dressing: In a mixing bowl, combine full-fat mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, minced garlic, black pepper, and salt. Stir until silky smooth. Reserve a bit to dress the romaine.
  • Prep Chicken: Pound chicken cutlets to an even thickness. Season with salt and pepper.
  • Set Up Breading Station: In three shallow dishes, create your breading station: mix all-purpose flour with a pinch of salt; whisk eggs; combine panko crumbs, parsley, black pepper, oregano, garlic powder, and Parmesan.
  • Bread Chicken: Dredge each cutlet in the flour mixture, shake off excess, dip in egg wash, then coat thoroughly with breadcrumb mixture.
  • Fry Chicken: Heat oil in skillet until it reaches 350°F (175–180°C). Fry breaded cutlets until golden brown, about 4-5 minutes per side. Let drain on a wire rack.
  • Assemble Sandwich: Slice baguette in half, spread Caesar dressing on both sides, add crispy chicken cutlet, dressed romaine salad, sprinkle with Parmesan, and enjoy!

Notes
