Ingredients

Main Ingredients

  • 8 tortillas Large Flour Tortillas Burrito size; soft and easy to work with.
  • 2 cups Shredded Cooked Chicken Using rotisserie chicken saves time.
  • 3 cups Shredded Mexican Cheese Blend Melts perfectly and adds great flavor.
  • 1 can Black Beans 15 ounces; rinsed and drained.
  • 1 tablespoon Mild Taco Seasoning Adds flavor without being too spicy.
  • 4 tablespoons Unsalted Butter Melted for brushing on the tortillas.

Instructions

Preparation

  • Take your flour tortillas and use a sharp knife or a pizza cutter to carve spooky faces into them.
  • In a bowl, mix the shredded chicken, black beans, taco seasoning, and 2 cups of the shredded cheese together.

Cooking

  • Lay a tortilla flat on a clean surface, place a good amount of the filling on one half, and sprinkle more cheese on top before folding it over.
  • Heat a non-stick skillet over medium heat and brush one side of the folded quesadilla with melted butter, then cook until golden brown.
  • Flip the quesadilla after brushing the top side with more butter and continue cooking until both sides are crispy and golden.

Serving

  • Cut the quesadillas into wedges and serve with salsa, sour cream, or guacamole for dipping.

Notes

For more color, add chopped bell peppers or corn to the filling. Experiment with different types of cheese for unique flavors. Smaller quesadillas can be made for bite-sized snacks.
