Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, finely minced
  • 2 cups chicken stock
  • 1 cup heavy cream
  • 8 oz egg noodles
  • 3 tbsp unsalted butter
  • 1/4 cup grated Parmesan cheese
  • salt and pepper, to taste
  • chopped fresh parsley, for garnish (optional)

Instructions

  • Season chicken breasts with salt and pepper. In a large skillet, heat olive oil and sear chicken until golden and cooked through. Remove and slice.
  • In the same skillet, add butter and garlic; cook until fragrant. Stir in chicken stock and heavy cream.
  • Add the egg noodles and simmer, stirring occasionally, until tender and the sauce thickens.
  • Stir in Parmesan cheese, then return chicken slices to the skillet and coat in sauce.
  • Garnish with parsley and serve hot, straight from the skillet.

Notes

Try swapping in chicken thighs for extra flavor, or lighten it up with half-and-half instead of heavy cream. Stir in spinach or peas at the end for freshness, and always use freshly grated Parmesan for the best taste. Leftovers reheat well with a splash of stock or cream.
