  • 4 large russet potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

Preparation

  • Grate the potatoes and onion using a box grater or food processor.
  • Transfer the mixture to a clean kitchen towel and squeeze out as much liquid as possible.
  • In a large bowl, combine the grated mixture with eggs, flour, salt, and pepper. Mix until fully combined.

Cooking

  • Heat oil in a skillet over medium-high heat.
  • Scoop about 2 tablespoons of the potato mixture into the pan and flatten into a pancake shape.
  • Fry for 3–4 minutes per side, or until golden brown and crispy.
  • Transfer to a paper towel-lined plate to drain excess oil.
  • Serve warm with sour cream, applesauce, or your favorite dipping sauce!

Notes

For extra crispiness, fry in small batches and avoid crowding the pan. You can also add chopped green onions, garlic powder, or grated cheese for a flavor boost. These pancakes are perfect as a side dish for meat, eggs, or soup.
